Caramel Puffcorn




While I was home for the holidays my wonderful Aunt Julie introduced me to this magical caramel puffcorn (she always makes the best sweets!).

The puffcorn has a similar taste to regular carmel corn, but the sugar coating is baked over light fluffy puff corn pieces that melt in your mouth just like cotton candy! It's one of those treats that ends up being a little dangerous because you can't resist constantly sneaking a few pieces in your mouth!

Caramel Puff Corn
You will need...
2 cups brown sugar
1/2 cup Light Corn Syrup
1 cup butter
1/2 teaspoon vanilla
1/2 teaspoon baking soda
2-3 bags Chester's Puffcorn (I used 3 bags, but you can use just 2 bags if you want your sugar coating to be thicker).

Directions:

Set oven to 250 degrees F.

Coat a large roasting pan with cooking spray and dump the puffcorn inside. Boil the butter, corn syrup, and sugar on medium heat - stir frequently to avoid burning the mix. When the liquid begins to boil remove pan from heat, add the vanilla and baking soda, and stir with a wooden spoon or spatula. As soon as the mix starts to turn foamy pour over the puffcorn.

Stir the puffcorn until it is nicely coated in the sugar mix. Then bake for 30-45 min. - take puffcorn out of the oven every 10-15 min to stir. After baking, place on foil or wax paper to cool.

*This is the puffcorn you want to buy (you can usually find it at Wal-mart)
