Something Sweet: Oatmeal Chocolate Cake


Have you been looking for a perfectly moist cake recipe? Well, this oatmeal chocolate cake is just that...perfectly moist! 

My mom made this cake while I was visiting a few weeks ago and I just had to share the recipe! It's the type of cake that is so good you don't even need to bother with adding frosting (which is saying a lot coming from a frosting fanatic like myself!) But, if you do feel inclined to add some frosting, I would recommend a peanut butter icing recipe!

By the way, I have been searching for the perfect moist white cake recipe...anyone know of one?

Oatmeal Chocolate Cake
1 cup quick oats
1-3/4 cup boiling water
1/2 cup melted butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
1-3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 - 12 ounce bag of chocolate chips

Step 1. Boil the water in a medium saucepan. Then turn off the burner and stir in the oatmeal. 
Let the oatmeal sit in the water for about 10 min. Set aside.




Step 2. In a large bowl mix butter, brown sugar, and white sugar until well blended.



Step 3. Add the eggs and oatmeal, mix until well combined.


Step 4. Add in all of the dry ingredients...the flour, baking soda, and salt. Mix until incorporated.


Step 5. If your batter is still fairly hot (from the oatmeal) let it cool a little longer and then add the chocolate chips (if the batter is too hot it will melt the chocolate chips).

Step 6. Pour mixture into a greased 9x13 baking sheet, or fill baking cups to make into cupcakes! Bake at 350 degrees F for about 30 min. or until inserted toothpick comes out clean.

  4. This looks delicious! Love that it has oatmeal and choc chip - my fave combo. I made a Smitten Kitchen white cake that was pretty moist - all of her recipes are pretty good.

  8. Yummie! Just found the recipe and will try it this weekend.
    Have you found a good recipe yet for moist white cake? I recommend you take a look at www.joyofbaking.com. She has the most recipes and all kind of great ideas, also for moist cakes. I always bake mine on a lower temp. Might take a little longer, but the cake stays moist. Another idea can be to let the cake cool in it's bakingmold and maybe even cover it up with foil after 15 minutes. The damp from the cake doesn't go away, but will get back in the cake, giving you that delicious moist. (Sorry if my english fails at times, I am Dutch).
