Rich Italian Soup



I know spring is here and soup season is over right? Well, if you hurry you may still be able to catch a chilly day, perfect for serving this dish...trust me its worth it! I was first introduced to this delectable Italian Soup by my awesome cousins Bryce & Nadia. I can honestly say that it has become my all-time favorite and when I ask my husband what he wants for dinner, he almost always asks for this meal.

Even though it may not be soup season where your at, I hope you will give this recipe a try, you wont be sorry!


Rich Italian Soup

Ingredients 
1 pound of Italian Sausage
3/4 cup chopped onion
6 slices bacon, diced
1-1/4 teaspoons minced garlic
1 cube chicken bouillon
7 cups water
5-6 potatoes, cubed
3 cups kale, rinsed & chopped 
1/2 cup heavy cream

You will also need a large pot for this recipe, 
I'm not sure how large mine was, but here is an idea for scale...


Step 1. Cook Italian sausage in a large skillet over med-high heat, set aside. 
(I didn't have Italian sausage on hand, so I used regular pork sausage and simply added about 1 tablespoon of Italian seasoning).


Step 2. In the same pan, saute onions and bacon for about 10 minutes. 
Then add garlic and saute for an additional 2 minutes.


Step 3. Bring water to a boil in a large pot. Add the chicken bouillon and diced potatoes. 
Let simmer for about 25 minutes, or until potatoes are tender.


Step 4. Add the kale, heavy cream, sausage, and bacon mix. 
Simmer for an additional 5-10 minutes.



Step 5. Serve!
(yes those are my legs in the spoon reflection...anyone who knows how to avoid this, do share!)

  3. You know just because it's "spring" doesn't mean it has "sprung" in Washington! Every day is chilly here. I am going to make this soup this weekend. Todd would probably say "You had me at bacon."
